I'm certain ShinyRukii had a reason for banning you (i.e. Kill Aura hacking). I understand that you can show me your folder with your Minecraft versions, your screen, etc., but you could have been hacking and then deleted your hacks before you took the screenshot. Does that make sense?
Unfortunately, the only thing that would really count as evidence would be if you were recording at the exact moment you were banned. If you were doing so, you could absolutely include that in an appeal (if it hadn't been denied at that point). Mods+ don't have to have evidence in order to ban; this helps us be more efficient. However, a lot of us do still take evidence anyway, and if Shiny was, then that would have been considered in the appeal.
My bad, I didn't know that anybody could ban me for anything! Next time ill record every joining at mineplex I SWEAR! What to do to prove it anyways? To show you my browser history!? I can do it! Want to show you what I was downloading in downloads? I can do it! Ill do anything to prove!

If you've already appealed, there's nothing you can prove or anything you can show me to prove that you're not a hacker; you just have to wait it out. We do definitely trust the staff; we undergo a lot of training so that we understand the difference between skilled PvP and hacking. Additionally, if everyone is calling you a hacker more than once, you can report them in the reports section of the forums.
