Apparently, according to the Bukkit Javadocs, you can bypass an entity's invincibility (hit cooldown) time by doing more damage than it got previously (other sources seem to confirm this as well, such as a little tidbit in the mcMMO source). This makes some sense - it means that large amounts of poison and regen can't make you invulnerable to hits - but it has another interesting implication as well.
Crits do more damage than regular hits, so if you do a regular hit first, your next crit should be able to bypass the invincibility time! In other words, if you jump up as you hit someone, on the way down you should be able to crit them for additional damage, even if they're still on their damage cooldown! If you have good timing in a sword fight, you could potentially do almost double the damage per time that you'd normally do without using this technique.
